Southwest Chicken Panini
Ingredients:
6 slices sourdough bread
8 slices mozzarella cheese
6 frozen boneless chicken tenders
ranch dressing
hot sauce (we used 2 Mild, 2 Hot, and 1 Fire Taco Bell packets; season to taste)
tomatoes (opt)
butter
Directions:
1. Prepare the chicken tenders as directions say (about 12 minutes in a skillet)
2. Tear apart the chicken into bite-size chunks
3. Cover one piece of bread in chicken
4. Mix hot sauce and ranch in a bowl. Start with about 2 Tbsp of ranch, and go from there. This isn't exact, mostly to taste.
5. Drizzle the sauce over the chicken
6. Add 2 slices of cheese and 3 tomato slices (if desired)
7. Cover with another slice of bread
8. Lightly butter the outsides of the bread
9. Grill for a few minutes, until the bread is golden brown and cheese is melted
10. Slice and serve with leftover sauce
